- 1 1/2 teaspoons of Dijon mustard
- 1 teaspoon of Chinese chili sauce
- 1/2 cup of light mayonnaise
- 25 oz. of canned, salt-free white meat chicken packed in water
- 8 oz. of canned water chestnuts
- 4 green onions
- 2 Tablespoons of unsalted nuts
- 1/4 teaspoon of black pepper
- 2 teaspoons of lime juice
- 12 lettuce leaves
To begin, mix the mustard, chili sauce, and light mayonnaise together in a medium mixing bowl until smooth.
Drain the chicken and mix it into the bowl. Drain and chop the water chestnuts and add them in as well. Chop the green onions and nuts (almonds, cashews, or walnuts are best) and mix them into the bowl. Season with pepper and lime juice to taste. (Note: one fresh lime should yield the required 2 teaspoons of juice.)
Spoon the mixture into each lettuce leaf and serve chilled. This is a great recipe for serving when you have guests over, as it is easy to share and sure to please even your picky diners.
